First you should place it in boiling water and remove it forthwith, and roast it, basting it with a sauce made of spices, that is ginger, cinnamon, cloves, grains of paradise - and it is better if you add grilled bread soaked in wine, verjuice, and vinegar, and baste it with this; and when it is cooked, pour all (the sauce) over; it should be limpid and dark-colored.
